Recently, Joey has been working later and not home for dinner most nights so Olivia and I have been trying new recipes and switching it up a bit! This chicken and zucchini meal is one we tried a few nights ago and it was DELICIOUS! It is definitely going in the menu rotation.
The first thing that attracted me to this recipe was how quick and easy it is. If you have read other recipes I have tried on my blog, you will notice that I am always looking for meals that don’t require a ton of time in the kitchen. The Recipe Critic said that this would take about 25 minutes from start to finish and she was almost spot on!
Another thing I really liked about this meal was that it is one pan, so I didn’t have to do many dishes after we ate! Sometimes we have a tough time getting Olivia to eat different things but she ate the chicken and asked for seconds, yay! The zucchini, she wasn’t too fond of, but you can’t win them all! Enjoy! xoxo
- 2 chicken breasts sliced in half or 4 thin breasts
- 8 tablespoons of butter, divided **
- 1/2 cup Italian bread crumbs
- 1/2 cup plus 1 tablespoon grated parmesan cheese, divided
- 1/4 cup flour
- 2 garlic cloves, minced
- 2 medium zucchini, sliced **

** Next time I make this meal, I will definitely use less butter. I didn’t use as much zucchini, since I had a hunch Olivia wouldn’t be eating them, and the chicken was dripping in butter. I would probably use half of the amount of butter the recipe calls for, but that is up to your taste buds!
