Stuffed peppers is the type of meal that I make pretty often and am constantly trying new ways to cook it! I have tried a lot of different recipes and took parts of each one to fit our taste buds. I sometimes play with the amount of each ingredient I use but this is the base recipe! What is your favorite way to make stuffed peppers?? xoxo

What You’ll Need:

  • 1 lb. ground turkey
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small can of tomato soup (more if you put the soup on the bottom of the dish to bake the peppers!)
  • 1 teaspoon onion powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 4 peppers (I like to use different colors!)
  • Shredded cheese (for on top of the peppers)


  1. Preheat the oven to 375 degrees
  2. Heat olive oil in large skillet on medium heat for about 30 seconds to 1 minute
  3. Add garlic and saute for 2-3 minutes or until it becomes fragrant, being careful the garlic doesn’t burn
  4. Add the ground turkey to the pan and mix with the garlic while cooking, ground turkey is done when there is no more pink, drain
  5. Add the spices and tomato sauce to the meat and simmer for 5-10 minutes stirring occasionally, season with salt and pepper to taste
  6. While that is simmering, cut the tops off the peppers and take out the seeds and inside of the pepper
  7. Fill peppers with the meat mixture and place standing up in baking dish
  8. Top with shredded cheese, cover with aluminum foil and bake for 25-30 minutes (baking times depend on the oven)
  9. Let sit for 5 minutes to cool down before serving

*When I cut the peppers down the middle to eat, I like to put a little bit more cheese on each half!
