When I’m at work, I sometimes find it hard to figure out a healthy lunch! I either don’t eat enough, bring something horribly unhealthy or eat too much.

I am constantly looking for new things to cook and new recipes so I went on Pinterest to see what I could find! I came across these Green Chicken Bowls from Eazy Peazy Mealz, which by the way look amazing, and went to the website to find out more information and how to make them.

It was a little intimidating when I first took a look at the number of ingredients and directions to make the bowls! I had never heard of the sauce before and I wasn’t sure if it would turn out eatable! I went to Aldi today and picked up all the ingredients to make the lunch and went to town!

Coming from someone who may really like to cook but who may not be the best at it, these chicken bowls were not hard to make at all! I was so excited! There are a few steps and a good amount of spices and different foods that go into making it the meal that it is but let me tell you, it comes together easily.

I made a few changes to mine, including using cous cous instead of brown rice and using less lemon juice because I have fructose absorption and really can’t have fruit. I also eliminated the red wine vinegar because of the same reason.

Once everything was made and I was putting it all together, I didn’t use as much of the Tzatziki sauce as I did the cous cous. I put all the finished pieces into my bento boxes and put them in the fridge for the week! I was able to get four boxes out of it which means four days of work yay!

You may read this and see all the ingredients and almost run like I did but don’t! I promise you it was simple to make and put together! And you will have a delicious lunch for the week!


Greek Chicken:

  • 2 lbs boneless chicken breast
  • 1/4 cup olive oil
  • 3 tbs garlic, minced
  • 1/3 cup fresh lemon juice
  • 1 tbs red wine vinegar
  • 1 tbs dried oregano
  • 1/3 cup plain Greek yogurt
  • Salt and pepper, to taste

Cucumber Salad:

  • 2 cucumbers, sliced
  • 1/3 cup lemon juice
  • 2 tbs olive oil
  • 1 tbs red wine vinegar
  • 1/2 tbs garlic, minced
  • 1/2 tsp dried oregano

Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1 cucumber, diced
  • 1 tbs garlic, minced
  • 1/2 tbs dill weed
  • 1 tbs fresh lemon juice
  • 1 tsp lemon zest
  • Salt and pepper, to taste


  • 3 cups cooked brown rice
  • 1 1/2 lbs cherry tomatoes, sliced in half
  • 1/2 cup red onion slices
