The only thing I can say about this chicken is YUM! I have been making this easy recipe for awhile now and it is SO good. It only takes four ingredients and together they are delicious!
I originally found the recipe on Pinterest, obviously, and immediately bought the ingredients to try it out! When it is a busy weeknight and you don’t really have time to cook, grab this Italian Chicken Bake recipe. I use thin chicken breasts or tenderloins which don’t take as long to cook and I can really taste all the flavors.
When I first try a recipe, I make it exactly like the recipe says and then tweak it after that to fit our taste buds. With this chicken, I have tried fresh mozzarella instead of shredded mozzarella and I really like it either way. The only thing I have definitively changed is I put the chicken in without the cheese on top first and let it bake for about 3/4 of the time. Then I take the dish out, put the cheese on and cover with aluminum foil for the rest of the time! I have found that the cheese melts perfectly that way.

- 3-4 boneless, skinless chicken breasts
- 4-6 tablespoons pesto
- 1-2 tomatoes (I have used different kinds and they have each worked!)
- 1 cup mozzarella cheese, grated
