Saturday Morning Menu: Homemade Pancakes!

Saturday mornings are for three things: cuddles, cartoons and chocolate chip pancakes!

Unfortunately in our house it is also for dance class now, what were we thinking?! When Olivia was little, we used to bring her into bed with us and cuddle for as long as we could. Now, we get up and make breakfast before getting her ready to dance her little booty off!

I can honestly say I had never tried making pancakes from scratch before I found this recipe from Allrecipes.com. I have always been a pancake or waffle mix in a box type of person! We got a griddle for Christmas two or three years ago so I got into it and started searching on Pinterest (obviously!) for recipes to make them homemade. I remember printing out a couple of different recipes to try, I clearly take my breakfast food seriously, and went to town!

These weren’t the first ones I made but they are the only ones I make now. They are fluffy, light and taste WONDERFUL! Olivia and I love adding chocolate chips to these (and eating some in our hands as we go!). One of the things I love the most about these pancakes is that you probably have all of the ingredients you need in your pantry and fridge. I almost always have everything on hand so I can make them whenever we want!

I promise you that if you try this recipe, you will never go back to box mix again! The only thing I do different when I make these pancakes is I tend to add more flour, a teaspoon at a time, because I like the batter to be thicker. When we are done eating, I put the leftovers into a plastic bag and freeze them! Then when we want them next, I grab them out and pop them in the microwave before putting on the syrup!

Old Fashioned Pancakes

Ingredients You Will Need:

  • 1 1/2 cups all purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
