Each year for my birthday, one of my best friends and her family cook a beautiful dinner for me and we spend the evening celebrating. Whenever they ask me what I want to eat, I always say one thing: meatloaf! I love meatloaf! To me, it is the perfect comfort food that makes me feel right at home.
A year or so ago, I was trying out meatloaf recipes to make at home and stumbled upon a recipe for Clean Eating Turkey Meatloaf. My husband was skeptical, which he usually is when it comes to me trying a new recipe! I can admit, I have had some major fails in the kitchen. Like when I was DETERMINED to make soup from scratch and nothing I made even tasted like soup!
But, this recipe is totally delicious! I mean, you wouldn’t even know that it was ground turkey instead of ground beef. I found it on Pinterest (no surprise there!) and have not made meatloaf any other way since! Even Olivia loves it, SCORE!
- 2 tbsp of coconut oil
- 3 cloves of garlic, minced
- 1 cup of onion, chopped
- 1 package of ground turkey
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup ketchup
- 1/2 teaspoon black pepper

The only things I do differently when I make the meatloaf is I use onion powder instead of an onion because Olivia doesn’t like the pieces in her food! I also tend to use less than a 1/2 cup of breadcrumbs and I add oregano! Enjoy! xoxo
