“Crickets are singin’ and lightning bugs are floatin’ on a breeze.” – Jessica Carvin J&Paper
Oh summertime. Sweet, sweet summertime when the days are long and the nights are for cool breezes and catching lightning bugs.
Is there anything better than getting together with friends and family for a BBQ in the summer? Nope, I don’t think so either. I love any excuse to be outside, especially on those cooler summer days because if I am honest I am not a fan of heat.
I am definitely one of those people that complain when it is hot and then am depressed when it is the dead of winter. Yup, that’s me. Okay, back to barbecues and food.
One of my favorite things to eat in the summer is a cold pasta salad. Yum! Unfortunately, my husband refuses to eat pasta salad, so my only time to make these dishes are for a party or BBQ. So basically, I make one of these kinds of salads for every event in the summer. (Judgement free zone here!)
On those hot summer days, the last thing I want to do is be in the kitchen with the oven on making something for dinner. A pasta salad is easy to make, is refreshing and can be kept in the fridge to eat for leftovers. I mean, come on, can you ask for anything more?
